I love oysters, and while they are a welcomed food on my plate anytime, I think the best time to enjoy oysters on the half shell is in the Spring. There is something about sitting outside on a spring afternoon  in the warm sunlight with a cool breeze, drinking a cold beer and throwing back oysters. Everyone has a different style for eating oysters on the half shell. Some just slurp the oysters right out of the shell, others douse them in lemon juice and hot sauce (guilty!) before throwing them back, and some eat them smothered in cocktail sauce on Saltine crackers. There is no right way to eat an oyster, the only rule is to enjoy them. And tip your shucker!
